Pesto & Arugula Panini

This 3-ingredient sandwich is packed with flavor and lots of greens! Pairing homemade pesto with fresh mozzarella and arugula is a combination made in heaven!


Fresh whole wheat or sourdough bread

Fresh mozzarella, thinly sliced

1-2 TBSP pesto

1 large handful of arugula


  1. Preheat a pan with olive oil on medium-low heat.

  2. Spread pesto on both slices on bread.

  3. top one slice with fresh mozzarella and then a handful of arugula.

  4. Place the other slice of bread on top and press firmly to help them stay together.

  5. Place in the pan and cook until the cheese has melted and both sides are golden brown and crisp.

  6. Cut in half and enjoy with pickles (my favorite!) or anything else your heart desires!
