Tomorrow is Valentine's Day, so I thought I'd make my banana bread a bit more festive by making it extra chocolate-y! And I am SO glad I did! This recipe is deintitely a new favorite!
Ingredients:
1 cup all-purpose flour (sub: 1:1 gluten-free flour)
1 tsp baking soda
1/4 tsp salt
2 TBSP unsweetened cocoa powder
8 TBSP butter, melted (sub: coconut oil)
1/2 cup sugar
1 egg
1 tsp vanilla extract
3 ripe bananas
1/2 cup plain Greek yogurt
1 cup chocolate chips
Method:
Preheat the oven to 350°F.
Grease loaf pan or muffin tins.
In a large bowl, mash the bananas.
Add the butter and sugar and mix until well combined.
Whisk in the egg, vanilla, and yogurt.
Add the flour, baking soda, salt, and cocoa powder, and whisk until just combined, being careful not to overmix.
Fold in the chocolate chips until evenly incorporated.
Pour the mixture into the pan and bake for 45 minutes to 1 hour, until a toothpick inserted comes out clean.
Let the bread rest for 15 minutes before digging in!
