Chocolate Teff Banana Muffins
Teff is a gluten-free, ancient whole-grain from Ethiopia. It is a powerhouse of nutrients including iron and is high in protein. Substituting some of the wheat flour in this recipe for teff helps boost the nutrition without sacrificing flavor.
Ingredients:
1 C teff flour
1/2 C whole-wheat flour
1/2 C all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 C honey
5 TBSP coconut oil
1 egg
2-3 ripe bananas
1 tsp vanilla extract
1/4 C plant milk
1 C dairy-free dark chocolate chips
Method:
Pre-heat the oven to 350 F and line muffin tins with paper liners.
In a large bowl, mash bananas.
Add honey, coconut oil, egg, vanilla, and plant milk, whisking until combined.
Next, add the three flours, salt, baking soda, baking powder, cinnamon and mix until combined.
Finally, fold in the chocolate chip until evenly distributed.
Divide that batter evenly between the muffin cups; it should make 10-12 muffins.
Bake for 20-24 minutes until cooked all the way through.
Enjoy alone or topped with nut butter...my favorite!
